This is my absolute favourite summer salad recipe! It's full of good stuff for your body and it's also fun to eat because of lots of different textures and of course flavours! The salad goes very well with any type of barbecue. And – not to forget – it looks absolutley beautiful!
Ingredients
1 Cup of Couscous (about 250g)
1 Cup Water (about 250ml)
Salt
1 tsp. Butter
1 Cucumber
1 Sweet pepper
2 Carrots
10 Cherry tomatoes or 2 big tomatoes
A hand full of raisins
A lot of parsley
Dressing
5 tbsp. Olive oil
3 tbsp. Lemon juice
Salt
Pepper
Serves 4-6 people
Directions
Boil the water with a dash of salt in a pot with a lid. It’s important that you don’t loose any water via steam. When the water is boiling take the pan off the stove, add the couscous and put the lid back on the pot. Make sure that all couscous gets some water. Let it rest for 5 Minutes. Then add the butter and loosen the couscous with a fork.
Put the couscous on the side and let it cool down.
In the mean time grab a big bowl and start to cut all the veggies in small parts. Okay, this might take a while but if you are two or more people it’s real fun to have a nice talk and produce a lot of colorful dices 😉
If you are alone either way you can have a nice talk with yourself 😛 Or listen to music and dance to it. Or imagine what happened if you’d own a unicorn. Or a giraff. Or a baby hippo…
When you are finished with the veggies, hack the parsley and add it to the colorful dices in the bowl. Now get the cool couscous and mix everything together.
In a little bowl add the ingredients for the dressing and pour it over your salad. Mix everything again. If necessary add some more lemon juice, salt and pepper.
