This is my favorite broccoli dish in the world. Simple, fast, and full of flavor. Keeping the broccoli fresh and crunchy is what separates this veggie recipe from the rest… it becomes a snack that you want ready to eat in your fridge at any time of the day.
Its great served hot, as a side dish, and remains delicious when cooled down too, good as a healthy movie snack option.
Ingredients
1 head of broccoli
1 red chili
1 tablespoon of olive oil
Pinch of ground sea salt
1 lemon (for the rind)
Serves 2 – 4
Directions
Bring water to boil in a small pot
Cut or break the broccoli head into bite size pieces
Carefully remove all the seeds from the red chili then finely chop the outer skin.
Put the broccoli into the boiling water for about 1 minute. Watch carefully waiting for the broccoli to take on a vibrant green color – remove from the stove and strain the water out. Simply put – blanch your broccoli. Below is the broccoli after straining.
Move your broccoli to a serving bowl and pour the olive oil over it while still warm. Sprinkle your salt and use the small holes on the grater to grate the lemon rind into the bowl. Put the chopped chili in and toss your salad to mix it up.
It’s ready to serve now – if you can resist not eating one after another until the entire bowl is finished 😉
